Are you ready for the upcoming 4th of July weekend? Here at Casey's we couldn't be more excited! Independence Day is perfect for getting friends and family together to unwind and celebrate our country, specifically all of the brave men and women that help keep America safe.

A Very Cool Month

July is one of our favorite months for a pretty sweet reason – it's National Ice Cream Month! Start this incredible month off by adding a 4th of July dessert to your get-together and trying one of our easy-to-make ice cream treats!

Here’s a little sneak peek at one of our favorites: Frosted Sugar Cookie Sandwiches! You only need two ingredients: 1 pouch sugar cookie mix and 4 cups Frosted Sugar Cookie Ice Cream.

Here’s how to make them! 

  1. Heat oven to 375 degrees Fahrenheit. Make cookies as directed on the pouch, using butter and egg, except place the dough in rounded tablespoonfuls 2 inches apart on an ungreased cookie sheet. 
  2. Bake for 11 to 13 minutes or until the edges are light golden brown. Cool 1 minute before removing from the cookie sheet, then cool completely, about 30 minutes. 
  3. For each ice cream sandwich, place 1 scoop of ice cream (about ⅓ cup) between 2 cookies. Gently press cookies together (ice cream should spread to the edge of cookies.) Roll ice cream edges in sprinkles.
  4. Eat immediately, OR to save for later, wrap sandwiches individually in plastic wrap. Place in a resealable freezer bag and freeze until needed.
